We love this soup as a main dish served with sourdough toast, but it would also make a great side dish or appetizer! It also tastes just as good if not better as leftovers. Plus, it's fairly easy to make!
Ingredients
4 tbs butter
1 bunch green onions, chopped
1 clove garlic, minced
4 tbs flour
2 cans chicken broth (fat-free, reduced sodium broth works fine!)
3 bay leaves
1 tsp Worchestershire sauce
2 cans artichoke hearts in brine, drained and chopped
Directions
In soup pot, saute garlic and onions in butter. Add flour, then stir in chicken broth. Add remaining ingredients and simmer on low heat for 20-30 minutes.
