I'm looking for a dressing too to go over it! Bean sprouts or alfalfa, blanched snow peas or sugar snap pea pods, thinly sliced radish, some lightly blanched asparagus,Various micro greens, butter, bib ot romaine lettuce(aside from Iceberg which generates negative calories and has NO nutritional value)Avocado(not sure if you have these in Ireland but they're wonderful in salad)

Why not add some slivered almonds. I know they aren't a veggie, but come on .. their are good for you and add texture. I love chicken in salad too. Adding a bit of protein will keep you full longer.

- Some vegies:

radish

chop suey

cauliflower

cucumber

cherry tomatoes

corn

raw broccli

beets (ew)

celery

onion

bell pepper (yellow and green)

mushrooms

raw zuccini

brocciflower (hybrid)

After this, you might need some of this-->

but it's worth it. LOL.

Wow I'm shocked..I would have thought the alfalfa and beansprouts may have been obscure but I was sure you would have heard of the rest..I guess there just isn't a market for them there

Nope, most people in Ireland associate a salad with a summer's day when its sunny outside but we rarely have those days so we're BAD eaters!
