This is a refreshing salad that receives rave reviews! I love making this with garden tomatoes. 4 large firm tomatoes, sliced into bite-sized pieces 4 ounces of feta cheese, crumbled 1/2 cup chopped kalamata or black olives 1 tsp. oregano 2 tbs olive oil 1/4 cup balsamic vinegar - adjust to taste salt and pepper to taste *1/2 purple onion - chopped (totally optional!) All the above are mixed together before serving. I recommend chopping the tomatoes and letting them drain for a few minutes in a strainer before adding other ingredients. Serve cold!
